Battlefield 2 - Despite being on the PC and having average graphics the gameplay on this thing was just amazing. Blew all other Shooter games away when it came out.
Resident Evil - A little nostalgia as this was the first 'adult' game that I really played ........ and was shit scared whilst doing so!!
Dead Space - *as above, but just more recently* I know a fair few people who didn't enjoy it but for imagination and ''in space nobody can hear you scream'' style terror it was pretty awesome.
Sensible World of Soccer was brilliant, but as someone picked that i will go for Die Hard Trilogy for the Playstation.

I'd probably say GoldenEye for the N64 as well. That game was incredible.
I don't really play modern games as I'm not really that bothered about them so I can't comment on very recent ones.
The early GTA games for the PS2 were excellent and I spent a long time playing them as I did with The Getaway.
PC -wise, I think Championship Manager 01/02 (I think - blue cover with Mitre ball?) was brilliant.
