    Doing a Spaghetti Bolognese tonight.

    Always make it with a pile of spaghetti & the sauce on top. That way the ratio of Bolognese to spaghetti per fork full is your choice.

    Been toying with the idea of mixing the sauce with the spaghetti before serving, not something I'm taking lightly as there's no going back once you've done it.

    Any of our culinary whizz kids got a preference?

    Take a ladle of sauce and mix the pasta through so it is coated but not covered.

    I always add the sauce to a mound of spaghetti (or sometimes linguine if I'm feeling particularly middle class)

    If you mix it in the meat tends to fall to the bottom so

    a) it looks like you have less than you do; and
    b) you end up with too heavy a meat-to-pasta ratio when you near the end of the dish

    Putting the sauce on top lets people decide for themselves how they want it

    Pasta to the sauce and mix.
    Do not drain the pasta but lift it from the water using tongs and add to your pan of sauce, mix immediately and it will never stick.
    When serving you will be left with meat in the pan so you still get a pile of meat on top and don't feel short changed.
